Tomato soup in a Wonderbag

Ingredients:

  • 2 tablespoons olive oil
  • 2 onions, finely chopped
  • 4 celery sticks, chopped
  • 3 garlic cloves, finely chopped
  • 6 tomatoes, scalded and skinned, chopped
  • 2 tins canned chopped tomatoes
  • 2.5dl vegetable or meat broth
  • 1-3 tbsp organic rapadura sugar (can be omitted)
  • Season with black pepper and salt.
  • Feta cheese, crumbled for garnish
  • Basil pesto or oil
  • 1-2 whole chilies (if you want a tomato soup with a little extra flavor)

How to make tomato soup in a Wonderbag


Heat the oil or butter in a large pot. Add the chopped onion, garlic and celery, and cook over low heat for 3-4 minutes until golden. Then add the chopped tomatoes, both fresh and canned, and 2.5 dl of stock – bring to a boil. If you want a tomato soup with a little extra kick, you can add the desired amount of finely chopped chili before boiling.
Season with rapadura sugar, salt and pepper before letting the pot cook for 2-5 minutes with the lid on. Place the pot in the wonder bag, with a cloth or pot mat at the bottom, and tie it tightly.
Let the stew sit and enjoy in the wonder bag for 3 hours before taking it out and using a hand blender or blender until the soup has a nice consistency with no lumps.
Garnish the tomato soup with crumbled feta cheese and basil oil or pesto.
Feel free to serve some homemade sourdough bread on the side.

Play with the food: If you want more variety and flavor, try adding a cup of sour cream at the end or experiment with fried bacon or red lentils.
